2 cups freshly grated coconut
1 1/2 cups sugar 
1 teaspoon salt
3/4 cup melted butter
2 teaspoons mixed spice
2 cups whole milk
1/2 cup raisins (optional)
2 beaten eggs
1 cup flour

1 teaspoon vanilla essence

 

Combine dry ingredients and raisins, add butter, milk, eggs and essences. Comine well, until the mixture has a solid but not stiff consistency. Spoon mixture in greased baking pans. Bake in a preheated oven at 350 degrees for approximately one hour, or until tester comes out clean. Allow to cool and store in a covered container. Refrigerate if necessary.
