Mauby, produced from mauby bark, is probably the most popular drink in Barbados. Non-mauby drinkers would often hear “You can’t be a real Bajan”. The bark of the Colubrina Elliptica tree is boiled in water for at least an hour, producing a concentrated extract. This is then diluted with water, and sugar, spices and essence to taste and refrigerated. The result is a bitter sweet drink, loved by masses. The bark can be purchased in supermarkets for those who prefer the authentic mauby taste, or bottled syrup can be bought for ease.
