Often served in November as a part of the Independence celebrations, conkies are a sweet, cornmeal based food. The mixture: cornmeal, pumpkin, coconut and sweet potato, are wrapped in banana leaves and steamed.
It could be argued that this is because it is a pains-taking process which persons care not do on a regular basis. Whatever the reason, conkies are scarce and sometimes nonexistent in the remaining 11 months of the year.
